At LUMBARA, we believe that quality coffee begins at the source. Every stage of our process is carefully managed to preserve the natural characteristics of the beans while ensuring consistency and reliability for our partners.

Our process begins with direct collaboration with local farmers in selected regions of Indonesia. Coffee cherries are harvested and collected at optimal ripeness to ensure the best possible quality from the very beginning.

Cherry Selection & Pulping

Cherry Selection & Pulping

Once collected, only properly ripened cherries are selected. The outer skin of the coffee cherry is then removed through a pulping process, separating the beans from the fruit while maintaining their integrity.

Fermentation Process

After pulping, the beans undergo a controlled fermentation process. This step is essential in developing the coffee’s flavor profile, allowing natural enzymes to break down the remaining mucilage and enhance the overall taste characteristics.

Washing

Following fermentation, the beans are thoroughly washed with clean water to remove any remaining residue. This ensures a cleaner taste and prepares the beans for the drying stage.

Drying

The beans are then carefully sun-dried under controlled conditions. During this process, moisture levels are closely monitored to reach the optimal standard, preventing defects and ensuring long-term stability.

SORTING

Once dried, the beans go through a detailed sorting and grading process. Defective beans are removed, and the remaining beans are classified according to quality standards and customer specifications.​

FINAL HANDLING AND PREPARATION

Before distribution, the beans are properly handled, packed, and prepared to maintain freshness and quality during storage and transportation.
